Craft & heritage

Where Taiwanese tea meets traditional distillation

Both bottles come from the same hands: generations of distilling expertise, a deep respect for Taiwanese tradition, and a relentless pursuit of purity, aroma and quality.

Shung Tang, the distillery mark

With over 50 years of experience in Taiwanese spirits, Dr. Lai Shung-Tang is a pioneer in traditional kaoliang distillation and aroma-preserving techniques.

His dedication bridges generations of craftsmanship, from classic kaoliang production to distillation methods designed specifically for tea spirits.

The core philosophy

Reduce impurities. Preserve aroma.

Our spirits are built from the aroma of the original plant, so what reaches the glass has the structure, fragrance and aftertaste of the tea, not an imitation of it.

Reduce unwanted compounds such as methanol and harsh congeners
Preserve delicate volatile tea aromatics
Enhance texture and smoothness
Maintain clarity and length on the palate

Cleaner, softer, more aromatic, more expressive.

Our distinctive process

Four stages, one aim

Multiple refinement stages

Repeated refinement reduces impurities before the tea ever meets the spirit.

Proprietary distillation

A method developed specifically to carry volatile tea aromatics through distillation intact.

Secondary resting

Time in barrel and a second rest round the edges and build a soft, smoky depth.

No artificial flavouring

Nothing is added back. What you smell in the glass came out of the leaf.

The crafting behind the spirit

From the leaf to the bottle, in four chapters

From the tea plantation

Terraced tea gardens in Taiwan

Every year our master distillers visit selected Taiwanese tea plantations to source the leaves for our tea spirits. Each harvest is inspected in person for aroma, quality and character.

Grown in clean, pesticide-free tea gardens, the leaves are chosen to preserve their natural fragrance, delicate complexity and authentic Taiwanese character within the spirit.

Only teas with exceptional fragrance become part of HowSan.

Traditional kaoliang craft

Our spirits begin with traditional Taiwanese kaoliang production, using sorghum, wheat koji and natural fermentation.

The distillery follows time-honoured methods, cultivating naturally occurring microorganisms instead of artificial cultures, so Taiwan’s own environment shapes the final aroma, depth and flavour.

  • Only carefully distilled spirits
  • No artificial flavourings

The third distillation

After the traditional kaoliang spirit is distilled, it is infused with carefully selected Taiwanese tea leaves. Each batch is evaluated by the master distillers and the tasting panel until the tea reaches its optimal aromatic profile.

The spirit then undergoes a proprietary third distillation, developed by master distiller Dr. Lai Shung-Tang, which preserves the delicate floral, fruity and honeyed tea aromatics while removing unwanted impurities.

Not a tea-flavoured spirit. A spirit that carries the aroma, complexity, texture and finish of the tea itself.

Time and patience

A numbered oak cask in the barrel store

Selected expressions are matured in American bourbon oak, which lends greater depth, complexity and a subtle whisky-like character. Every barrel is monitored to hold the balance between tea aroma, oak influence and spirit.

After ageing, the spirit is given a secondary rest and blended by hand for smoothness, clarity and consistency before bottling.

Exceptional spirits cannot be rushed.
